Packed with lean protein, nutrient-rich sweet potatoes, and a creamy, additive-free ranch dressing, this dish is as wholesome as it is flavorful. Ingredients
For the Buffalo Chicken Sweet Potatoes:
4 medium sweet potatoes
2 Ib chicken breast
3/4 c buffalo sauce
Chopped green onion (for serving)
For the Homemade Buttermilk Ranch Dressing:
3 Tbsp Homemade Buttermilk Ranch Dressing Mix (see recipe note)
1/2 cup whole milk
1 cup mayonnaise
Directions
Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly, pat them dry, and pierce each a few times with a fork. Place the sweet potatoes on a baking sheet lined with parchment paper or foil and roast in the oven for 45-60 minutes, or until tender when pierced with a fork.
While the sweet potatoes roast, bring a large pot of water to a boil. Add the chicken breasts and cook for 15-20 minutes, or until fully cooked (internal temperature of 165°F/74°C). Remove the chicken from the pot and let it cool slightly before shredding it with two forks. In a large bowl, toss the shredded chicken with the buffalo sauce until evenly coated.
To prepare the homemade buttermilk ranch dressing, whisk together the Homemade Buttermilk Ranch Dressing Mix, whole milk, and mayonnaise in a medium bowl. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
To assemble, slice the roasted sweet potatoes open and fluff the insides with a fork. Top each potato with a generous portion of the buffalo chicken. Drizzle with the homemade ranch dressing and garnish with chopped green onions before serving. Enjoy!
