Cozy Fall Creamy Mushroom Risotto

Ingredients

  • ½ cup Healthier Comforts Whole Milk Powder, reconstituted with 1 ½ cups warm water

  • 1 cup arborio rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225 g) mushrooms, sliced (cremini, shiitake, or mixed)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • ½ cup white wine (optional, or substitute with extra broth)
  • 4 cups chicken broth, warmed

  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. In a large skillet or saucepan, heat olive oil and butter over medium heat.
  2. Add onion and garlic; sauté until softened and fragrant.
  3. Stir in the mushrooms and cook until golden brown.
  4. Add arborio rice and stir for 1–2 minutes until lightly toasted.
  5. Pour in white wine (if using) and stir until absorbed.
  6. Add 1 ladle of warm broth, stirring frequently until absorbed. Continue adding broth, one ladle at a time, allowing each addition to absorb before adding the next.
  7. When the rice is creamy and just tender (about 18–20 minutes), stir in the reconstituted Whole Milk Powder mixture and Parmesan cheese.
  8. Season with salt and pepper. Garnish with fresh parsley.
