Directions
Start by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper or use a standard loaf pan.
Finely dice the mushrooms and the celery stalk. Chop the small onion and sauté it in a pan with a light coating of olive oil cooking spray until soft and translucent.
In a small bowl, combine the 8 tablespoons of Animal-Free Egg White Powder with 1 cup of water. Whisk vigorously until the mixture is smooth and has the consistency of a thick liquid binder.
In a large mixing bowl, crumble the 6 plant-based burger patties. Add the diced mushrooms, diced celery, the cooked onion, garlic powder, salt, and vegan Worcestershire sauce.
Pour the prepared animal free egg white mix into the bowl with the other ingredients. Use your hands or a large spoon to mix everything together thoroughly until it is evenly combined.
Transfer the mixture to your prepared baking sheet or loaf pan. Shape it firmly into a traditional loaf shape, about 9x5 inches.
Place the meatloaf in the oven and bake for 1 hour
While the meatloaf is baking, you can prepare your side dishes. Toss the baby potatoes with a bit of olive oil and salt and roast them alongside the meatloaf for 30-40 minutes. Sauté the green beans with garlic just before serving.
Once baked, let the meatloaf rest for about 10 minutes before slicing. This helps it hold its shape. Serve hot with your roasted potatoes, green beans and spread the sugar-free ketchup evenly over the top of the meatloaf slices
