    • 1/4 cup Healthier Comforts Organic Pea Protein Powder (Unflavored & Reduced Sodium)
    • 1 can black beans

    • 1/2 cup grated carrot
    • 1/3 cup rolled oats
    • 1/4 cup finely chopped onion

    • 2 tbsp tomato paste
    • 1 tsp garlic powder
    • 1/2 tsp smoked paprika
    • 1/2 tsp ground black pepper
    • 1 tbsp olive oil (for cooking)

    • 4 whole grain or gluten-free burger buns
    • 4 lettuce leaves
    • 4 slices tomato
    • Optional: mustard, vegan mayo, or ketchup

    Directions

    1. In a mixing bowl, mash black beans until mostly smooth. Add grated carrot, oats, onion, tomato paste, seasonings, and pea protein powder. Mix well. Let sit 5 minutes.

    2. Divide the mixture into 4 equal portions and shape into burger patties. Heat olive oil in a skillet over medium heat. Cook each patty 4–5 minutes per side until golden and firm.

    3. Lightly toast the burger buns in a pan or toaster for extra texture.
    4. Place a lettuce leaf on the bottom half of each bun. Add veggie patty and tomato. Top with desired condiments and the other bun half.
