Cheddar Potato Soup

Ingredients

  • ⅓ cup Healthier Comforts White Cheddar Cheese Powder
  • 2 tbsp butter or olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced (about 2 cups)
  • 2 cups low-sodium chicken or vegetable broth
  • 1 ½ cups milk

  • Salt and black pepper to taste
  • Optional toppings: chopped chives, bacon bits, or extra cheddar powder sprinkle

Directions

  1. In a large pot, melt butter over medium heat. Add onion and sauté until translucent, about 3 minutes.
  2. Add garlic and cook 30 seconds until fragrant.
  3. Stir in diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until potatoes are soft.
  4. Mash some of the potatoes in the pot for a thicker texture.
  5. Stir in milk and White Cheddar Cheese Powder, whisking until smooth and creamy.
  6. Simmer for another 5 minutes. Adjust salt and pepper to taste.
