Lactose Free Creamy Tomato Soup

Ingredients

  • 3 tablespoons lactose free skim milk powder

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 28oz crushed tomatoes

  • 2 tablespoons tomato paste
  • 2 cups water
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • Salt to taste
  • Fresh parsley or basil for garnish (optional)

Directions

  1. Heat olive oil over medium heat. Add chopped onion and cook for 3–4 minutes, until soft. Add garlic and cook for 1 more minute.

  2. Stir in the crushed tomatoes and tomato paste.

  3. In a separate bowl, whisk 3 tablespoons of powdered lactose free skim milk into 2 cups of warm water until completely dissolved.

  4. Add the prepared milk mixture to the saucepan. Stir in dried basil, pepper, and salt. Simmer for 10–12 minutes, stirring occasionally.

  5. For a smoother texture, blend the soup using an immersion blender or transfer to a blender in batches.
